The summer months call for bbqs and lazy days spent at the beach. It's also the perfect time of year to eat fresh seafood like prawns. Whether marinated and barbecued, in a salad or rounding out a dish, prawns are a succulent treat. Here are three ways to cook them into something delicious:
For a light summer snack with plenty of flavour, try this recipe for chilli and garlic prawns.
Melt 80g of butter with 2 tbs of oil in a frying pan. Add in 4 thinly sliced garlic cloves and 2 chopped red chillies. After a minute throw in a kilo of peeled prawns and cook for 3-4 minutes. Dress the prawns with 2 tbs lemon juice, 3 tsp lemon rind and some chopped coriander.
With the sun staying up for longer and warm evenings to boot, an outdoor bbq dinner is the perfect way to enjoy summer. Start your meal off with some barbecued prawns.
Marinate a kilo of peeled prawns in the following mixture: 85g melted butter, 3 tbs of olive oil, a crushed garlic clove, 2 tbs of chopped chives, ½ tsp of paprika and salt and pepper. Barbecue the prawns on a pre-heated hotplate over a high heat for 2-3 minutes.
When you feel like a lazy dinner that still tastes delicious, pizza is the way to go. Top with prawns and you've got a winner. Here's one way to do it.
Top a pizza base with tomato sauce, mascarpone, parmesan cheese, around 10 halved cherry tomatoes, 12 peeled and butterflied prawns, 2 sprigs of rosemary, olives and some chilli flakes. Bake for 10-13 minutes until the prawns are cooked and the base golden.
