A Gift From the Chef – Executive Chef Anthony Lui's Stir-Fried Turkey with Pine Nuts Recipe

This festive season we're giving the gift of good food by sharing with you a selection of handpicked recipes from our renowned restaurant partners. Here we have a gift from Executive Chef Anthony Lui of Flower Drum, a fine dining Cantonese restaurant in Melbourne. Use this delicious twist on roast turkey to stand out from the traditional Christmas dishes this festive season.

Ingredients

  • 300 gm roast turkey fillet (cut into 5 cm slices)
  • 50 gm onion, use the inner one (cut in wedges)
  • 60 gm red capsicum (in wedges)
  • 60 gm yellow capsicum (in wedges)
  • 60 gm tender celery (cut into 4cm in length)
  • 60 gm sugar peas (topped & tailed)
  • 60 gm Swiss brown mushrooms, remove stalks (cut into slices)
  • 2 tablespoon chicken stock
  • 50 gm unsalted roasted pine nuts
  • 1/3 tablespoon cooking oil

Seasoning

  • ½ teaspoon salt
  • ½ teaspoon sugar
  • ½ teaspoon soy sauce
  • 1 teaspoon shaoshing wine
  • ½ teaspoon sesame oil
  • ½ teaspoon potato flour or cornflour
  • 2-1/2 tablespoon chicken stock

Method

  • Mix seasoning ingredients in a bowl.
  • Heat the wok with oil, stir-fry onion for a few seconds. Add red and yellow capsicum and stir-fry for a few seconds. Add celery, sugar peas and mushroom and toss them well to combine over medium heat for a few seconds. Add chicken stock and turkey and cover with lid and cook for one minute over medium to high heat until there is no sauce (if sauce is still there turn to high heat).
  • Add bowl of seasoning and quickly stir through.
  • Serve on garnished plate and sprinkle pine nuts on top.
