Deliciousy Easy Peach Upside Down Cake

shutterstock_45571585If you are after a retro dessert for a dinner party, you can't go past the classic peach upside down cake. Upside down cakes were popular in the 1920s and 30s, but they still make a delicious treat for after dinner or enjoyed with a cup of tea.

Traditionally, upside down cakes were made with pineapple, but the versatile cake can be created using a variety of different fruit. Once turned over, the cakes display a yummy mosaic pattern of sweet fruit that glistens under its glaze.

Taste offered a delicious peach upside down cake that's both easy to make and scrumptious to eat:

What you'll need:

  • 2 x tins of peaches
  • 2/3 cup ground almonds
  • 400g English teacake packet mix
  • 3 eggs
  • 80g soft butter
  • 2/3 cup milk
  • 1/3 cup apricot jam

Method:

1. Preheat your oven to 180°C and grease a 20cm round cake tin. Line with paper and arrange the peaches over the base. Sprinkle about 2 tablespoons of the ground almonds over the fruit.

2. With an electric mixer, combine cake mix, eggs, butter and milk, beating for two minutes. Fold through the remaining almonds, then pour the cake batter over the peaches.

3. Bake for 50 to 60 minutes and then let the cake sit for 10 minutes before upending on a wire rack to cool.

4. Heat the jam in the microwave for 30 seconds and then brush over the peaches. Allow jam to set before serving.
