Go Sweet and Tangy with Ginger Prawn Soba Noodles

For an elegant lunch or a light dinner delight, prawns are a treat that's hard to refuse. Deliciously sweet prawns are perfect for summer entertaining and when teamed with tangy flavours such as in this Taste recipe, your guests will be melting with every mouth-watering bite:

Ginger Prawn Soba Noodles

This is a dish that is easy to prepare, yet packs a flavour punch. Enjoy!

Method

1. Cook a 180g packet of dried soba noodles according to the directions. Add 150g snow peas and diced asparagus in the final stage of cooking, refresh and then drain.

2. In a small bowl, mix 1 1/2 tbsp soy sauce, 1 tbsp rice wine vinegar, 1 tsp sesame oil and 1/2 tsp castor sugar. Let stand.

3. In a separate bowl, add 500g peeled green prawns, ginger, garlic and half the soy mix. Cook the prawn mixture in small batches in a non-stick pan using peanut oil for three minutes each batch.

4. Throw all ingredients into a bowl together with three thinly sliced spring onions, toss and then serve.
